Using AI to Promote Healthier and Sustainable Food Choices for Consumers and Farmers

In a world increasingly aware of the importance of sustainability and health, this research project aims to leverage artificial intelligence (AI) to foster healthier and more sustainable food choices among consumers and farmers. The project focuses on two primary objectives: promoting public health by encouraging the consumption of nutritious, sustainable food options and supporting farmers in adopting practices that are both health-conscious and economically viable. By integrating AI with advanced research methods, the project seeks to develop data-driven strategies that can effectively influence food choices, benefiting both individuals and the environment.

The overall purpose of this PhD will be to guide the development of targeted strategies aimed at promoting healthier and more sustainable food choices.

This research explores the potential of artificial intelligence (AI) to develop strategies that promote healthier and more sustainable food choices. The project aims to improve consumer well-being and support sustainable farming practices. Central to this study is the question: How can AI-driven insights be leveraged to influence consumer behavior and encourage practices that enhance both health and sustainability?

To address this question, the study will use a combination of Discrete Choice Experiments (DCEs) and Contingent Valuation (CV) surveys, both enhanced by AI-driven analysis and stakeholder input. DCEs will be employed to identify the key factors that influence consumers’ food choices, such as price, nutritional quality, and environmental impact. These experiments will help determine the trade-offs consumers are willing to make when selecting different food options. On the other hand, CV surveys will be used to assess the monetary value consumers place on healthier and more sustainable food options, providing insights into their willingness to pay for such attributes. The study will also include a stakeholder analysis to understand the interests and influence of key groups, such as consumers, farmers, policymakers, and food producers.

AI will play a crucial role in processing and analysing the data from these methods, allowing for the identification of patterns and the prediction of consumer preferences. Furthermore, AI models will be used to evaluate the potential effectiveness and economic viability of various policy interventions and incentives designed to encourage these behaviors.
