Main purpose of job:

To manage and deliver all catering requirements at the Residence of the British High Commissioner Kuala Lumpur.

Roles and responsibilities / what will the jobholder be expected to achieve?:

  • Prepare and cook high quality food to a range of VIP events held at the Residence including small lunches, large dinners, afternoon teas, buffets and receptions on a regular basis;
  • Monitor stock levels of basic ingredients and purchase stock as required;
  • Operate commercial cooking equipment such as stoves, cookers, fryers and hotplates;
  • Possess a basic knowledge of HACCP guidelines and FCO Food Safety guidance;
  • Possess minimum level Food Hygiene certificate or equivalent;
  • Ensure that food supplies are stored properly and used resourcefully;
  • Make sure that the kitchen is clean and organised at all times;
  • Order and check food deliveries ensuring good budget control;
  • Keep accurate documentation of all menu’s including all allergen advice;
  • Provide appropriate menu choices including accurate costings for a variety of events when required;
  • Responsible for R&D, creating new dishes or menu;
  • Hire and supervise casual kitchen staff when required;
  • Accurately account for kitchen budget;
  • Work and communicate with external vendors regarding kitchen maintenance and recycling system.

  • Experience in a fast moving commercial kitchen.
  • Experience of devising menu’s and working to budgets.
  • Evidence of successful completion of catering course from reputable catering or general college.
  • Basic food hygiene certificates.
  • A passion for food and food preparation.
  • A good palate.
  • An eye for detail and good presentation skills.
  • A desire to learn.
  • A desire to learn.
  • An interest in sustainability.
  • Basic food allergens and dietary knowledge.

  • Experience of, or interest in, the role of hot and cold kitchen chef.

  • Working in a diplomatic mission;
  • Understanding how UK international development assistance is managed / implemented;
  • Understanding effective programme management (including Monitoring, Reporting, Evaluation, and Learning).

Working patterns:

The standard working hours for the BHC are 8:00am to 4:30pm Monday to Thursday and 8:00am to 1:15pm Friday. There are conditioned hours for this job, they can be worked flexibly and geared towards hospitality requirements, e.g., on a day with a dinner, to start later given the evening function and annual ad hoc weekend such as Remembrance Day.
